Spinach Lasagna Gluten Free


The other day I was in Whole foods and I saw they had Lasagna noodles and they looked so yummy and tasty. So I knew I had some spaghetti sauce in the freezer and I had some spinach and Ricotta cheese so it was time to make lasagna again. I really missed Lasagna and now that I found these no bake lasagna I would be making it. The only problem was i got a phone call while baking this so it's a little toastier than normal.


Spinach Lasagna
2 eggs
1 ½ cups of Ricotta Cheese
1 Box of gluten free lasagna noodles
2 cups cooked spinach
2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon pepper
4 cups of your favorite spaghetti sauce I used Drunken Meat Sauce
1 cup mozzarella cheese
cooking spray
Equipment
1 9 x 9 pan
1 sheet of foil

Preheat oven to 350


Warm sauce in a large pot.



Take 2 eggs whisk together Add Ricotta Cheese, garlic powder, salt and pepper to eggs .





Cook spinach in microwave according to directions then place in cheese cloth and drain all excess water off.
Next add spinach to Ricotta and Egg Mixture Mix thoroughly.


Take 9 x9 pan and spray with cooking spray, Add sauce on bottom of pan, Next Place noodles horizontally on sauce. Then add Cheese and Spinach mixture.


Next place noodles vertically and add sauce, then add Cheese and Spinach mixture.


Repeat until cheese mixture is gone. Next place noodles vertically and add sauce.Cook covered for 45 minutes then uncover and add cheese until golden brown.

Banana Bread made with Home Made Rice Flour and Oat Flour.


As you know I have giveaway to do today with Cornaby’s Farms and we had many entries.  Since trying the Cornaby’s product I have been inspired more to bake cookies, breads and all sorts of goodies. However, as I explained to you in my last post It is very expensive to bake Gluten Free. After having such a great success with the Oat flour I decided to venture out of Oats and try to make Rice flour. Well this worked with the coffee grinder but bit was not as fine as the oats and I had some beads in the rice when finished. If you like a crunchy bread or muffin this is the way to make rice flour, but if not I suggest you buy a rice or mill grinder. Kitchen aid makes a fabulous mill grinder that attaches to there stand mixer.

Now on to my Recipe for Banana Bread made with Home Made Rice Flour and Oat Flour.

Makes 2 large Loafs

Preheat oven to 350 degrees

Banana Bread made with Home Made Rice Flour and Oat Flour Ingredients
5 Bananas the older the better
2 ½ cups of Granulated Sugar
4 eggs
2 teaspoons baking soda
1 teaspoon baking powder
1 cup rice flour
2 cups gluten freeoat flour.
Cooking spray

Equipment
Measuring cups
2 large loaf pans.


Beat bananas and sugar at high speed for 3 minutes until turns into liquid.



Add eggs and vanilla beat again.



Last add Baking Soda, Baking powder, Rice Flour



Spray cooking pans with cooking spray.


Poor batter in Pan 3/4 full.


Bake in oven at 350 for 1 hour.

Home Made Rice Flour

Now that I realized that I can make Oat flour my next try was Rice Flour. So easy, however, I think I'm going to invest in a grinder/ mill.


Making Rice Flour


Measure Oat 1 Cup of rice


Place in coffee grinder do not place past max line.


Grind until a fine rice dust or powder appears.

Enjoy this fun activity with your little ones!!!

A Gluten Free Flour you make at home!


Have you ever gone to your cupboard and had no flour? Well I was at the market the other day looking at all of the Gluten Free Flour options and I happened to notice that when reviewing the ingredients one was made of ground oats. I then thought to myself. Why I am I paying $8.00 for a bag of flour when I have a case of gluten free old fashioned oats in my garage. So I thought to myself should I get out my food processor or better yet my coffee grinder. 


So I got out my coffee Grinder and then I thought lets try it out with a batch of cookies and yes it worked! Plus works so well no Xanthium Gum required when making cookies.


Measure Out  1 cup of  gluten free oats


Place  in grinder to maximum spot!


Do Not Fill past Max mark!


Grind and place in air tight container so no clumps form


To Substitute for regular flour use equal portions. So If the recipe calls for 2 1/4 cups flour. Use 2 1/4 cups ground oats it will work just the same and I made double chocolate mint cookie with this and it turned out just great.

Fast and Flavor full Pasta


So the other day I received this fabulous box
When I opened it look what I found. This fabulous box has aprons and cookbooks and all sorts of goodies including 3 kinds of stewed tomatoes.  So the main reason Red Gold sent us this fabulous swag is for # Iron Chef Challenge with Ott A.  So I quickly put it away knowing the recipe was due on March 18th a Friday. I would post a meatless meal in honor of lent, me being the good catholic girl.  However, this post was written prior to the horrible earthquake in Japan So it will be a Meatless Monday post.



Fast and Flavor full Pasta Ingredients:

½ cup of  lemon juice,  about 2 lemons.
1 cup shredded Parmesan Cheese
1 Can of Red Gold Tomato and Basil diced tomatoes
1 Cup Marinated  Artichokes quartered.
1 Cup of Sun Dried Tomatoes
1 Box of Pasta I used Gluten Free


Boil Pasta according to directions until fully cooked.
Tip if the Day: Salt your water this is how the pasta gets its flavoring. If I'm making a meat sauce that includes Beef or Chicken. I place a Beef or Chicken bouillon cube in the pasta while boiling. This always gives it additional flavor.

While  pasta is cooking make sauce by taking the juice of two lemons and the Parmesan Cheese in a pan until cheese melts and combines with lemon juice.



Next drain Red Gold tomatoes with lid on if a little extra juice stays in can that’s okay.


Add Artichokes and Sun-dried Tomatoes


Toss with cooked pasta serve immediately.

Story of Saint Patrick plus Irish Soda Bread


So today is Saint Patrick’s day! Do you have your green on? The legend of Saint Patrick is that he came back to Ireland and saved the people from snakes but this is not true. What happened with Saint Patrick was as a child he was sold as a slave. Yes you heard me correctly! Did you know the Irish people were the first slaves? Saint Patrick was a slave for 6 years then decades later he came back to Ireland and preached the faith of Christianity. He used the shamrock as a cross because of its shape and this way no body would know that they were worshiping a different God. There was a strong belief in Ireland prior to Saint Patrick coming to share Christianity that all kinds of gods, dating back to 3,500 B.C., the pre-Celtic peoples of Ireland worshiped the sun with shrines. In the ancient religion, wells and rivers were associated with goddesses. For example, the rivers Shannon and Boyne are named after goddesses and these are not Charlie Sheen's goddesses.


Saint Patrick’s day is celebrated all over the world, but today in Ireland all the banks and post offices are closed. Here in the United States we turn the Chicago River Green; The White House fountain is also died Green and we have parades and parties celebrating our Irish heritage. The saying goes even if your not Irish, today everyone is! So in honor of Saint Patrick I am going to share my families Irish Soda bread that my grandmother made for me as a child. However I am going to make it Gluten Free. Plus I am posting a quick and Easy way to make your Corned beef tonight.



Gluten Free Irish Soda Bread Ingredients:

2 ½ cups of All purpose Gluten Free Flour
1 cup Sorghum Flour
3/4 cup powder sugar
1 teaspoon Baking Soda
½ teaspoon Baking Powder
1/8 teaspoon Xanthium Gum
1 egg
2 tablespoons vinegar
3/4 cup milk
2 tablespoons melted butter
1 cup raisins
Decorative sugar I used green.


 

In a large mixing bowl Mix all dry Ingredients.
In a measuring Cup place vinegar 1st, Milk next then egg the Milk should curdle.
Mix Together then add butter and raisins



Form in 1 large ball or 4 small balls place a x or a cross on the top sprinkle with sugar or decorative sugar.
Bake in oven at 350 for 25 to 30 min until golden brown .

Enjoy and watch out for that Leprechaun

Corned Beef the Irish Way

Corned beef Cabbage the Irish way Ingredients:

1 Corned Beef
2 or 3 onions Quartered
A couple of cloves of garlic
3 Tablespoons Olive Oil
Red potatoes cleaned and scrubbed
1 Head of Cabbage that is cut into 8 equal pieces.


In a large stock pot fill 3/4 full of water , Next add Corned beef and Seasoning Packet.


Quartered Onions , Garlic cloves


And boil the heck out of it according to package directions. When meat is done add cleaned and scrubbed potatoes, after removing the beef and placing in the oven to keep warm, boil potatoes for 20 minutes in the beef stock until easy to Pierce.

Last add cabbage about 5 minutes prior to potatoes being done.  Serve right away.

Raspberry Swirl Oatmeal black and white Chocolate Chip Cookies plus 2 Giveaways from Cornaby's Farm.


About two months ago I noticed that @Cornabys had started to follow me on twitter and soon after they contacted me about a new product called Cornaby’s Fruit Spread. Their product sounded very interesting and I they sent me a sample and I tasted the raspberry fruit spread and I fell in love with their product. I next tweeted about these fabulous fruit spreads and jams and soon I was contacted asking me asking if I would like to do a giveaway with them. Since then I have learned that.

Now on to the recipe Raspberry Swirl Oatmeal black and white Chocolate Chip Cookies!! Oh My Goodness, what a yummy and taste cookie to make for your family or loved ones.

Raspberry Swirl Oatmeal black and white Chocolate Chip Cookies Ingredients:
½ cup softened butter
1/2 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1/8 teaspoon Xanthium gum
2 cup gluten free all purpose flour
1 teaspoon baking soda
2 cups Old Fashioned Oats
1cups white chocolate chips
1cups semi sweet chocolate chips
1/4 cup Cornabys Raspberry fruit spread.

Preheat convection oven to 350 degrees
Cream Sugars and butter

Next add Eggs and Vanilla


Sift together flour, Xanthium Gum and Baking Soda and mix with creamed Butter mixture and add the old fashioned oats until thoroughly blended together.


Fold in the White Chocolate Chips and semi sweet chocolate chips.



Last take the back of a spoon and poke 3 inch holes in batter and fill with cornaby’s fruit spread and close up.


Scoop out with a melon baller or cookie scoop and place on either parchment lines or silpat lined baking sheet .

Bake for 11minutes until golden brown cool then serve.
