Banana Bread made with Home Made Rice Flour and Oat Flour.


As you know I have giveaway to do today with Cornaby’s Farms and we had many entries.  Since trying the Cornaby’s product I have been inspired more to bake cookies, breads and all sorts of goodies. However, as I explained to you in my last post It is very expensive to bake Gluten Free. After having such a great success with the Oat flour I decided to venture out of Oats and try to make Rice flour. Well this worked with the coffee grinder but bit was not as fine as the oats and I had some beads in the rice when finished. If you like a crunchy bread or muffin this is the way to make rice flour, but if not I suggest you buy a rice or mill grinder. Kitchen aid makes a fabulous mill grinder that attaches to there stand mixer.

Now on to my Recipe for Banana Bread made with Home Made Rice Flour and Oat Flour.

Makes 2 large Loafs

Preheat oven to 350 degrees

Banana Bread made with Home Made Rice Flour and Oat Flour Ingredients
5 Bananas the older the better
2 ½ cups of Granulated Sugar
4 eggs
2 teaspoons baking soda
1 teaspoon baking powder
1 cup rice flour
2 cups gluten freeoat flour.
Cooking spray

Equipment
Measuring cups
2 large loaf pans.


Beat bananas and sugar at high speed for 3 minutes until turns into liquid.



Add eggs and vanilla beat again.



Last add Baking Soda, Baking powder, Rice Flour



Spray cooking pans with cooking spray.


Poor batter in Pan 3/4 full.


Bake in oven at 350 for 1 hour.
