Strawberry Raspberry Lemonade Spiked of Course


Are you looking for a great drink to serve pool side this Memorial day Weekend. 

Well I have just the drink for you. Its quick and easy and tasty too.

Strawberry Raspberry Lemonade Spiked Ingredients:

1/2 cup Strawberry Lemonade
1/2 cup ice
1/2 cup Seagrams Raspberry Lemonade Wine Cooler.


Take all 3 ingredients mix together and serve. 

Enjoy I know I will!!

The Strawberry Festival 2012


So this past Saturday we decided after seeing the signs over the years that it was time for us to visit the Strawberry Festival. We went on line and saw we could park at one of 8 locations and take a bus to the Strawberry festival or pay $10 and park on site. So we decided to do just that! We parked at Center Pointe Mall and hopped on the bus for a 2 minute ride to the Strawberry Festival. Next we went and purchased tickets to enter Adults were $12 and Children were $6.


We got there and saw all of these craft stands when we first walked in. 


Miss J  had to try out the hammock chair

Then we went  visited the Corn Stand and ordered some food. 

Miss J had some corn on the Cob.

Then it was Drinks they had many options from Strawberry lemonade, Strawberry Beer, Strawberry with Champagne

Next we had dessert these are Strawberry Nachos. Miss J had a chocolate covered Strawberry but ate it so fast no picture could be taken. 

Then lastly Miss J rode a couple rides.

Then we purchased some Strawberries and called it a day.

Disneyland Poolside Lunch

So as you know I love to stay at the Disneyland hotel and recently I had the opportunity to stay at this fabulously redone resort. The best time to go to the pool is lunch time when all of the restaurants in the park are busy and full.  I go back to my room and put on my swim suit go for a quick splash in the pool then order lunch by the pool.

You can rent a poolside cabana like we did.  


Then look at the menu and order a nice fruity drink while perusing the menu. Did you know that there are many gluten free options available pool side at The Disneyland Hotel Pool. The pool is always a pleasant 80 degrees weather its summer, spring, winter or fall . Plus the food is delicious!!



I ordered the Asian chicken salad with diced chicken breast, cashews, and red and gold peppers tossed in sesame vinaigrette.

Miss J had the Grilled Salmon Kids meal which is one of there Gluten free kids meal options.

The next time you stay at Disneyland and have the urge to exit the crowds on a hot summer day. My suggestion is go to the pool and grab a bite!

Chicken Nachos + Mother's Day

So how was your Mothers Day? Mine was simply fabulous we went to Disneyland with Miss J and a couple of friends; and as always we had a fabulous time. 







We started off the morning with a brisk walk in Downtown Disney and to my pleasant surprise I saw this gorgeous new Lego Store all completed  after renovations.


 Next we went for a fabulous breakfast at La Brea Bakery Cafe.


We rode all  of our favorite rides including Star tours, Dumbo and Pirates of  the Caribbean .


Then after a long day in the Park, to top it all off,  we got home and I took a nap. When I a woke, I heard my Fabulous daughter Miss J in the kitchen, and she was making  me this great dinner. Chicken Nachos Oh My Goodness so yummy .  It was such a pleasant surprise and I'm going to share this quick and easy recipe with you that your 9 year old can make too.











Chicken Nachos Ingredients:
2 cups of Tortilla Chips
1/2 cup of shredded rotisarie chicken
1/2 cup shredded cheese
1/4 cup tomatillo salsa
1/4 cup chopped tomatoes
Sour cream optional

Take first 3 ingredients and layer then microwave of 45 seconds in microwave safe plate or bowl.

Next add last ingredients and serve immediately.

Mother's Day & Disneyland Park at Jolly Holiday Bakery


So what's your plan for Mother's day? You know it's this Sunday! My plan is to go to Disneyland with my friends and family. My Mom is no longer with us, so it's all about me on this special day. Hope fully we can eat at The Joly Holiday Bakery and have a couple gluten free sandwiches like these ones. I love this new restaurant on Main Street because its fun to sit and people watch here or just watch the parade go by in the afternoon. 

Plus for dessert we will have these fabulous gluten free cookies made by OMG....
Miss J will really love to watch the Parade with her Mom.
Plus we will be able to see all of the crazy and fun characters?

Super Easy Hummus by Stephanie




As I explained in my original post on Dana's Shower my friend Stephenie brought this fabulous Hummus that she served with Pita Bread. It is so yummy and tasty and she was kind enough to share her husband Michael' s  recipe.

Super Easy and Yummy Hummus
2 16 oz cans of chickpeas or garbanzo beans
1/2 cup liquid from can of chickpeas
1/2 cup  lemon juice (depending on taste)
3 tablespoons tahini
2 - 3 cloves garlic, crushed
1 teaspoon salt
4 tablespoons olive oil
Directions:


Drain chickpeas and set aside liquid from can. Combine chickpeas (or garbanzo beans), lemon juice, tahini, garlic and salt in blender or food processor. While blending, drizzle in the olive oil then the cup of liquid from chickpeas.


Blend for 3-5 minutes on low until thoroughly mixed and smooth.


As time goes on and you make more and more of it, you will find your groove and maybe a little more lemon juice, or more garlic or olive oil. Serve with pita Bread or Pita Chips or Gluten Free Crackers so you can serve a Gluten Free Appetizer.

Hash Brown Casserole


I was lucky enough to have one of Dana's friends offer to make a side dish for me and she came up with this great gluten free recipe. The only thing that I recommend is always read the labels of the ingredients before you purchase because not all cream of mushrooms soups are gluten free nor  are all corn flakes, so read those labels. In addition I want to thank Kim for being so kind to help me with this fabulous shower I couldn't have done it with out you.

Preheat oven to 400 degrees.

Hash Brown Casserole
1/2 cup butter, melted
1 can cream of mushroom soup
1 medium container sour cream
2 lb. frozen hash browns
2 cups shredded cheddar cheese
Salt and pepper to taste
1-1/2 cups plain corn flakes, crushed

Mix all ingredients in a large bowl except for the corn flakes. Spray an 8 x 10 glass dish/pan with non-stick spray. Pour mixture into the dish/pan. Sprinkle crushed corn flakes over the top. Dot with butter. Bake at 400 degrees for 45 minutes.
