A frittata from the leftovers in the fridge


I love to make Frittatas on either a long day after work or as a fabulous Sunday Brunch entree. The best part is you can look in your fridge and see what type of leftovers you have. This past Sunday we had a lot of goodies that I knew If I didn't use soon that they would end up in the garbage can.  So when my tomatoes are wilted or I have some left over onions and or  cheeses I always get out the staples of a Frittata and start the process.

2 Tablespoons melted butter
1 large potato graded or if you have frozen Hash Browns 1 1/2 cups
6 eggs
1 Cup Chopped Tomatoes or any other vegetable you have
1/2 cup shredded cheese ( I used 1/4 cup goat cheese plus 1/4 cup cheddar cheese)

Preheat oven to 350 degree oven.

Melt butter in non stick skillet

Brown Potato in melted butter

Take 6 eggs and whisk together

Chop grate and add your vegetables and cheeses of your choice next stir into eggs. Pour over browned Potatoes. 

When almost fully cooked flip over, Brown other side then place in oven at 350 for 20 minutes.

Enjoy and the next time you have some vegetables that are going to end up in the garbage if you don't use soon. Here's the perfect recipe for you.

Banana Bread Waffles


So Miss J loves her Waffles and is always asking for me to create a new flavor or kind that she can sink her teeth into. So when she asked me for waffles that tasted like Banana Bread I was up for the challenge.


Gluten Free Banana Bread Waffles Ingredients
1 1/2 cups rice flour
1 cup all purpose Gluten Free flour
1/2 cup powdered sugar
5 banannas smashed
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon Vanilla
 2/3 cups buttermilk or  2/3  cup Milk with  2/3 teaspoons apple cider vinegar
3 tablespoons butter so waffles don't stick butter waffle iron.
2 eggs

Mash 5 Bannanas add  rice flour, brown sugar, baking powder, baking soda, Gluten Free flour,  add powdered sugar,  buttermilk or  2/3  cup Milk with  2/3 teaspoons apple cider vinegar,, eggs and  vanilla extract.  Whisk togrther until blended to a somewhat thick batter.

Preheat Waffle Iron to Medium Setting.
Butter waffle iron so waffles don't stick . 
Pour 1/2 cup of batter on  waffle iron.


Wait for Waffle Iron to stop steaming and pull out serve with fresh bananas and strawberries.

Crock Pot BBQ Chicken

In my last post I spoke about quick and easy dinners on the go that you can prepare ahead of time. This is one of those easy on the go recipes that you can start either at Lunch time or before you go to work. I started this on my lunch hour then went back to work.



Crock Pot BBQ ChickenIngredients
Boneless skinless Chicken Breast can be frozen
1 16 ounce jar of Gluten free barbecue sauce 
1 1/2 cups Orange juice
Cooling Spray

Spray your crock pot with cooking spray so your chicken does not stick

Next add Barbecue Sauce and Orange juice.

Cover and Place on High for 3 hours if you want to start in the morning place on low for 6 hours.

Serve warm with Coca Cola Baked Beans and Scalloped Potatoes.

Coca Cola Baked Beans




The other day I was in a rush what’s new I’m a working Mom with a full time Job a 9 year old and a husband who always loves a home cooked meal when I get home from work. So I made barbequed chicken in a crock pot, make ahead quick and  easy scalloped potatoes and Coca Cola Baked beans all of these dishes I assembled or started to cook in the morning and then went off to work. I will be sharing the Coca Cola Beans today and the other two  recipes in the next couple of days.


Coca Cola  Baked Beans Ingredients:
1 can of Baked Beans
1 cup Coca Cola
2 Tablespoons Barbeque sauce (Make sure you read the label to make sure its gluten free.)
1/4 cup brown sugar
2 tablespoons brown mustard
Cooking spray

Take a oven safe dish and spray with cooking spray, Pour beans in to oven safe dish,

add barbeque Sauce,

next add brown mustard.

Lastly add Coca cola and stir and place in refrigerator for 4-6 hours to soak up the yummy flavors.

An hour before you are ready to serve place in oven at 350 degrees for 1 hour.

Cowboy Steak or Tri Tip a meal anyone will enjoy on the BBQ

So Summer has come upon us and here in Southern California we are in the middle of June Gloom the Sun might come out after 4 p.m.; if we are lucky  However, with Fathers day just yesterday I thought well I better share with you what I served last year for my hubby and Miss J for fathers day. This is a great recipe to grill either with your broiler or with your outdoor grill.  I love using my broiler, hubby does have the traditional Weber Grill that burns wood or brickets. However, I love my broiler and its very little clean up.  I also served it with creamed corn .

Plus a simple spinach salad with sliced eggs, crumbled  bacon and this dressing.












Tri-Tip with a simple Dry Rub(1) 3 pound Tri-Tip
3 tablespoons Granulated Garlic
3 tablespoons dried onion
2 tablespoons Salt
2 tablespoons Pepper

Preheat Broiler or Barbecue to 500+ Place Broiler on lowest setting.

Take Meat and Bring to room temperature this takes about a hour or so before cooking it could take up to an hour and a half with a 3 pound Tri-tip.

Next start Seasoning with Garlic, Salt, Pepper and Dried Onion on both sides

After meat is room temperature take a Instant Read Thermometer I use an All Clad Meat thermometer I really love it. Next place in the middle on the side of theTri-tip so probe is perfectly centered in beef both horizontally and vertically.

Cook at 5 min per side per pound so I cooked mine about 15 min a side 

Until meat thermometer reaches 145-155 that's medium will be brown on edges and pink in center.

Let rest 20 Minutes before cutting and serving.

Fabulous Gluten Free Waffles


My Little Miss J, not so little anymore, loves her waffles, especially with whipped cream and strawberries. This is a recipe I have made over and over and over again, to be quite honest with you, I debated about not even sharing it because it’s so good I thought to myself what a great product this would be to manufacture. Then I thought for the lucky few who do print it out or save it you will be blessed with awesome waffles. My Mom always taught me if you don’t put it out into the universe, how will what ever you have wished for  know how to  find you. So for now I’m sharing my recipe for my fabulous Gluten Free Waffles. Who knows what tomorrow will bring but I hope it brings you everything that your hearts desire.

Fabulous Gluten Free Waffles Ingredients:
1 Stick of butter
3/4 cup + 2 tablespoons brown rice flour.
3/4 cup + 2 tablespoons all purpose gluten free flour.
2 Tablespoons Sugar
2 Teaspoon Baking powder
1 teaspoon salt
3 eggs
1 cup of milk

Equipment
Cooking Spray
Waffle Iron

Heat waffle iron to medium setting,
Spray with Cooking spray

Melt butter in Large bowl in Microwave.

Add Both Flours, Sugar, Baking Powder, Salt and eggs and whisk together.

Now slowly add in Milk whisking together.

Now scoop about 1/4 to ½ cup of batter into heated waffle iron.

Wait for steam to stop then remove from waffle iron.

Serve with Whipped cream and Strawberries or Maple Syrup.
